Ingredients:
  • 1 lb ground beef
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 1 can (10 oz) red enchilada sauce
  • 1/2 tsp chili powder (adjust for spice level)
  • 1/2 tsp cayenne pepper (optional for extra heat)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 small flour or corn tortillas
  • 1 tbsp olive oil
  • Salt & pepper to taste

Directions:
  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Cook the beef
    • Heat olive oil in a skillet over medium heat
    • Add chopped onion and cook until soft (2โ€“3 minutes)
    • Add garlic and cook for 30 seconds
    • Add ground beef and cook until browned
  3. Season the mixture
    • Drain excess grease
    • Add taco seasoning + 1/2 cup water
    • Stir and simmer for 3โ€“5 minutes
  4. Add the spice
    • Mix in chili powder and cayenne pepper (adjust to taste)
    • Stir in 2โ€“3 tablespoons of enchilada sauce for extra flavor
  5. Prepare the tortillas
    • Warm tortillas slightly (microwave 20โ€“30 seconds) to prevent tearing
  6. Assemble the enchiladas
    • Add a scoop of beef mixture to each tortilla
    • Sprinkle a little cheese inside
    • Roll tightly and place seam-side down in a baking dish
  7. Add sauce & cheese
    • Pour remaining enchilada sauce over the top
    • Sprinkle remaining cheese evenly
  8. Bake
    • Bake uncovered for 20โ€“25 minutes until cheese is melted and bubbly
  9. Serve & enjoy
    • Let cool for 5 minutes
    • Serve with sour cream, cilantro, or avocado if desired
