Ingredients:

- 1 lb ground beef
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup water
- 1 can (10 oz) red enchilada sauce
- 1/2 tsp chili powder (adjust for spice level)
- 1/2 tsp cayenne pepper (optional for extra heat)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 small flour or corn tortillas
- 1 tbsp olive oil
- Salt & pepper to taste
Directions:
- Preheat oven to 375ยฐF (190ยฐC).
- Cook the beef
- Heat olive oil in a skillet over medium heat
- Add chopped onion and cook until soft (2โ3 minutes)
- Add garlic and cook for 30 seconds
- Add ground beef and cook until browned
- Season the mixture
- Drain excess grease
- Add taco seasoning + 1/2 cup water
- Stir and simmer for 3โ5 minutes
- Add the spice
- Mix in chili powder and cayenne pepper (adjust to taste)
- Stir in 2โ3 tablespoons of enchilada sauce for extra flavor
- Prepare the tortillas
- Warm tortillas slightly (microwave 20โ30 seconds) to prevent tearing
- Assemble the enchiladas
- Add a scoop of beef mixture to each tortilla
- Sprinkle a little cheese inside
- Roll tightly and place seam-side down in a baking dish
- Add sauce & cheese
- Pour remaining enchilada sauce over the top
- Sprinkle remaining cheese evenly
- Bake
- Bake uncovered for 20โ25 minutes until cheese is melted and bubbly
- Serve & enjoy
- Let cool for 5 minutes
- Serve with sour cream, cilantro, or avocado if desired
